Tough choices!! I love liver calves when cooked correctly or my version of al dente ( not dried and grey inside but still has a bit of moo on). And then there are chicken livers : on a stainless grill with onions or char-broiled wrapped in bacon< Then there is tongue- a bit laborious to prepare but chilled and sliced thin with some hot mustard- Oh Yum!!!
And fried brain with eggs is beyond the moon

Foie gras is my all time favorite organ food... followed closely by urchin.

We have a hot pot place nearby that offers intestine as a choice but I haven't been able to bring myself to try it!

I love eating small intestine, especially the ones from Sichuan-style hot pot. The Han Chinese people living in Sichuan province in mainland China love to eat small intestine. While preparing, the small intestine must be cleaned with water, and then cooked in hot water with some herbs to remove the stench. Once the odor is removed, it will be cooked in a piping hot pork or chicken broth with plenty of chili peppers and other spices in a hot pot before it is served. If you are an adventurous eater who love to try some challenging food in mainland China, be my guest by giving yourself a try on cooked small intestine in a spicy hot pot.
